upon by Burgundy, embraced by
California, oak – especially
new oak – has a tremendous
effect on every sensory aspect
of a wine. Choosing the middle
road, we use some oak on some
of our wines. Oak has a fascinating
origin and history. Its forests
throughout France were planted
to provide ship wood when the
world was still considered flat.
Each forest has subtle and definitive
characteristics as complicated
and unique as vineyards in Cote
d’Or or Marlborough. Coopering
is as much of an art as winemaking,
and strikingly similar. |
