THE
TECHNOLOGY OF WHITE WINE
I am anal about
white winemaking. Take a 60
year old stainless steel milk
tank; gas with argon, place
cooling plate (cooled by portable
glycol machine) in tank, then
fill ever so slowly with Viognier.
I firmly believe that if you
know what you’re doing
and have an ability to Mexicanize
equipment; then wine can be
made without a huge capital
investment
ps I am from
