THE TECHNOLOGY OF WHITE WINE

We have good equipment, some because it was made for the job, some because we delicately converted it. A 60 year old stainless steel milk tank, a steel yoghurt tank with its own slow turning electric motor, a ponderous welded pipe frame on which we suspend our state of the art de-stemmer, cooling plates for our gentle treatment of the fruit.
